Nestled on Bruton Place, serving Michelin-starred Japanese cuisine, Umu prides itself on the provenance and integrity of ingredients, which are used to create innovative Kyoto influenced dishes. 

Executive Chef Yoshinori Ishii brings over twenty years of cooking experience to the elegant dishes for which Umu is famed. Ishii has a rare eye for artful display as well as flavour, incorporating his expertise as not only a chef but also a skilled artist into each dish. In addition to being a highly accomplished chef, he is also a skilled fisherman, potter, and calligrapher and is involved in every aspect of the restaurant from flower arranging, to making the ceramic tableware. He maintains regular contact with Cornish and Scottish fishermen to whom he has taught the humane Japanese method 'ike jime' of fish preparation to preserve the quality of the fish. 

Ishii has designed the menus at Umu with both the traditional Japanese restaurant-goer and the contemporary Japanese food lover in mind. The A La Carte features dishes such as Tuna tartare with nagaimo, wasabi and Kaluga caviar, Wild Cornish lobster with homemade shichimi pepper and tofu miso bisque along with an extensive selection of sushi and sashimi. Also on offer to customers is the Kaiseki menu, a traditional tasting menu from Kyoto which changes on a seasonal basis. Umu use only the best suppliers for their products, sourcing fish from Cornwall, Scotland, Portugal, the Faroe Islands, Iceland and other European countries as well as meat from local, organic farms and Wagyu beef from Japan.
